Hyderabadi Arbi Roasted

Arbi roast cooked in hyderabadi style.

Ingredients:
# Arbi (colocasia): 300gm
# Ginger-garlic paste: 2tsp
# Mustard seeds: few
# Tamarind paste: 2tbsp
# Whole red chilly: 2-3
# Red chilly powder: 1/2tsp
# Turmeric powder: 1/2tsp
# Cumin powder: 1tsp
# Coriander powder: 1tsp
# Curry leaves: few
# Oil: 2tbsp
# Sugar: 1/2tsp
# Salt to taste

Method to Prepare:

Pressure-cooked the arbi for few minutes or unto one whistle. Wash them under cold running water and peel off the skin. Pierce the arbi with the help of fork and marinate in salt and turmeric powder for 15min.

Heat oil in a frying pan, adds mustard seeds, slitted red chilies, and curry leaves. As it, starts spluttering add the arbi and fry it on a low flame until it turns golden brown.

Now in small bowl add ginger-garlic paste, tamarind paste, rest of the spices and sugar. Mix them thoroughly and add little water if requires.

Add this paste to the arbi and coat them evenly. Cook on slow heat for few minutes until done. Add salt to taste.

Serve the hot hyderabadi arbi roast with Roti or Parantha.
