French Toast with a Tomato Twist

A tomato can bring a twist to our routine breakfast menu. What do you generally have for breakfast? Maybe, some golden, buttered toast with scrambled eggs; or a sandwich made with soft, slices of bread and generous spoonfuls of jam. Or, a bowl of cornflakes and an omelet. Once in a while, you probably like indulging in a plate of sizzling, golden French toast?

If you love your French toast as much as I do, you’ll be happy to try out another version of this breakfast delicacy. This one has been spiced up with a tangy tomato. Here is the story of the tomato and the French toast.

Ingredients:

2 slices of bread
Mustard sauce or any other sandwich spread
1 tomato – finely chopped
3 tbsp grated cheese
1 egg
2 chicken sausages – sliced fine
A pinch of salt, red chili powder and coriander powder

Method:

* Spread the slices of bread with mustard or any other sandwich spread.
* Make a sandwich with grated cheese, tomato and chicken sausages. Secure with toothpicks.
* Break an egg into a shallow dish and beat lightly with a fork. Add a pinch of salt, coriander powder and red chili powder to this.
* Dip the sandwich into the egg, then turn over and coat on both sides.
* Heat a tbsp of oil in a non-stick pan and fry the sandwich for 2-3 minutes.Serve with tomato ketchup or mint sauce.
