Ingredients | ||
4 pitas or pizza bread 3 tbsp oil, salt to taste,ground black pepper home-made mint chutney, 4 spinach or lettuce leaves 1 large tomato 2 cloves cruched garlic 1 cucumber - sliced 1 onion - finely sliced zucchini - sliced 1 capsicum - finely sliced 1 cup grated cheese | ||
Method | ||
1. Put 3 ts oil in pan and saute' sliced cucumber, onions, zucchini, capsicum & tomato for 1-2 mins. Add salt and ground black pepper. 2. Apply mint chutney on one slice of bread and spread grated cheese on it evenly. 3. Put the sauted vegetables on it. 4. Put few spinach or lettuce leaves on it. 5. Place another slice to cover it and press gently. 6.Apply oil on outside of the base and grill or toast in a pan. 7. Cut into smaller sandwiches. 8. Serve with tomato ketchup or tobasco sauce. | ||
