Egg Pizza

Ingredients:

6 Eggs
1 medium Potato
1 medium Red Onion
1/2 Red Capsicum cut into thin strips
1/2 Green Capsicum cut into thin strips
3 Green Chillies, chopped
1 clove of Garlic, crushed
A handful of Coriander leaves, chopped
2 tbsp Lime Juice
2 tbsp Butter
1/2 cup grated Cheese
2 big Tomatoes, cut into rings
Salt


Method

Boil the potato and remove skin. Cut into cubes.
Cut half of the onion in rings and chop the remaining half.
Heat a pan and melt butter; fry chopped onions till soft and add chopped chillies and crushed garlic.
After a minute, add potatoes and capsicum. Fry for two minutes and season with salt. Finally, add the lime juice and chopped coriander.
In a bowl, beat the eggs and season. Add the cooked vegetables in it. Pour this into a greased dish with raised sides. Place it under a hot grill for 3 minutes or until set.
Take the dish out and layer the tomato rings and onion rings on top. Sprinkle the cheese on top and bake for 3-5 minutes more.
Take out the dish and allow 5 minutes before you cut it into wedges. Enjoy your egg pizza.
