Bajji is a South-India dish, or better, a snack, which is suitable for family get-togethers and other traditional parties. Bajjis are best enjoyed in rainy season. In my city, once the rainy season starts, you can see 3-4 bajji stalls cropping up on every street. A plate of steaming bajjis and a hot cup of tea is what makes you feel that the rains are a total pleasure.
Bajjis can be prepared by using varities of vegetables including onions, plantains, chillies, brinjals and potatoes. You can try it out with other veggies as well and invent a new type of bajji all by yourself :) Bajjis are very easy to prepare - you just need to dip the vegetable in the batter and deep fry them. Here, in this recipe, I will be teaching you how to prepare Chilli Bajji…
Also, one important thing to keep in mind is that by eating bajjis, we will be consuming a lot of oil and is not for the calorie conscious. But, the taste is mesmarizing… the person who misses it is really punishing his taste buds!! Having said this, I’ll now start off with the recipe… Make a note of the ingredients and the preparation method.
Chilli Bajji Ingredients :
- Long thick green chillies (usually called as bajji chillies) : 10-12
- Ajwain - 3 table spoons
- Onions (finely chopped) : 2
- Coriander (finely cut) : 5-6 strands
- Tamarind paste : 1/4th cup
- Gram Flour (Besan) : 1/2 cup
- Soda : A pinch
- Chat masala : 1/2 tea spoon
- Lemon Juice : 1 tea spoon
- Salt to tast
- Oil fir deep frying
Preparing Chilli Bajji :
- Wash the green chillies and slit them vertically. Remove the seeds and empty their insides.
- fill the hollow chillies with ajwain and tamarind paste and keep it aside for 30-45 minutes.
- Take gram flour in a bowl and add a pinch of soda and salt. now add some water and make a batter such that it is not very watery and at the same time, not very thick.
- Heat some oil in a container for frying.
- Now take the stuffed chillies, one by one, dip them into the batter and slide them into the oil container immediately.
- Deep fry them until they are golden brown in color.
- Now, take them out of the container and place them on a plate covered with tissue paper towels so that excess oil is absorbed.
- And now again, slit these bajjis vertically and stuff them with finely chopped onions.
- Garnish each bajji with chopped coriander and chat masala.
- Sprinkle lemon juice on the bajjis just before eating… it makes the bajjis taste even better…!!

Chilli Bajjis are extremely easy and equally spicy. So, I recommend you to eat a maximum of 4-5 bajjis in one sitting. Eating more than this may cause some stomach problems, but otherwise, these are the best known snacks that can be prepared during get-togethers and kitty parties…
