Samosa

The Samosa was perfectly shaped, perfectly fried and the stuffing also tasted great. The crust was so crispy that even after dipping it into the tamarind syrup, this property was not lost. I was totally impressed with this dish so much so that I decided to make this a compulsory item in all parties that I host!! Everything tasted divine… right from the crust to the filling to the green chutney to the tamarind syrup, soooooooo tasty!!

So guys… How about some hot hot samosas today…?? Just make a quick note of the ingredients and the Samosa recipe.

Ingredients for Samosa Filling:

  • Oil: 3 tbl spoon
  • Ginger & Garlic paste: 1 tbl spoon
  • Green Peas: 1 cup
  • Potatoes: 2 (medium sized)
  • Coriander powder 1 tbl spoon
  • Jeera powder : 1 tea spoon
  • Mustard seeds: 1 tea spoon
  • Turmeric powder: 1/2 tea spoon
  • Fennel seeds: 1 tbl spoon
  • Salt to taste
  • Coriander leaves: 1 strand

Ingredients for Samosa Crust:

  • Maida: 2 cups
  • Warm oil: 1/2 cup
  • Ajwain: 1/2 tsp
  • Warm water if required to knead
  • Salt to taste
  • Oil to deep fry

The Samosa Recipe:

Preparing the Samosa filling:

  1. Heat oil in a kadai or a big pan and put mustard seed.
  2. After it splutters, add peas and fry for sometime.
  3. Then add ginger and garlic paste, turmeric powder and fry again for 5-6 seconds.
  4. Later, add coriander powder, jeera powder, fennel seeds and the the potatoes and fry them till the mixture becomes dry.
  5. In the end, add coriander leaves for the flavor.

Preparing the Samosa Crust:

  1. Take maida and add salt, ajwain and warm oil to it .
  2. Mix it well to prepare the dough.
  3. Just wet your hand with warm water to make the dough soft.

Preparing the Samosa:

  1. Take a big ball of the dough (lemon sized) and roll it very thickly into a disc.
  2. Let the disc be 11cm in diameter.
  3. Now, cut each disc in half to make a semi-circle. Place two teaspoonfuls of the potato mixture in the centre of the semi-circle.
  4. Fold this over to enclose the filling and make a triangle shape.
  5. Press the edges of the pastry with a fork to seal.
  6. Repeat the same thing with the other half as well.
  7. Then heat oil in a kadai to fry the samosa.
  8. Remember that you should fry the samosas in a low flame.
  9. Take them out of oil once they are golden brown.

Now, enjoy the hot hot samosas with Green Chutney or the tamarind syrup or Tomato Ketchup!!
