Ingredients:
4-5 potatoes, boiled, peeled, mashed.
2-3 green chillies, chopped
1/2 tsp. mustard seeds
1/2 cumin seeds
1 tbsp. oil
1-2 carrot, peeled and grated
1 tbsp. chopped coriander leaves
1 tbsp. lemon juice
1/4 tsp. sugar
Salt to taste
6-7 slices sandwich bread
Butter to apply on bread
Method:
Heat the oil in a skillet, add mustard seeds, cumin seeds and allow the seeds to pop.
Add chopped green chillies and fry a few seconds. Add mashed potatoes, salt,sugar, lemon juice,
grated carrot and coriander leaves. Mix well and remove from the heat.
Apply some butter on both sides of bread slices. Place the potato mixture on one slice.
Close with the next slice and toast it in a sandwich maker till well browned.
Cut each sandwich into triangles and serve hot.
