Semolina Halwa

Ingredients:

1 lb carrots, grated
2 cups milk
1-1/2 cups sugar
3-4 tbsp. ghee
1 tsp. ground cardamom
1 tbsp. almonds
1 tbsp. cashew nuts
1 tbsp. semolina (Rave--optional)

Method:

Place the carrots and milk in a heavy based pan and bring to the boil over high heat.
Reduce heat to medium and simmer until all the milk has been absorbed, stirring occasionally.
Add sugar and continue to simmer until the liquid has been absorbed.
Add ghee and cook gently for 10 minutes. Stir in the cardamom and simmer for 5 minutes.

Heat little ghee in a small pan, add nuts and semolina and fry for 1-2 minutes, until golden brown.
Pour it over the halwa and mix well.

Serve hot or cold.
