Crunchy Satay Drumsticks Recipe

Ingredients:

8 chicken drumsticks, skin removed
250gm packet natural tortilla chips, crushed
1 tbsp curry powder
¼ cup peanut butter
1½ cup natural set yoghurt
½ cup grated cheddar cheese

Method:

  • Combine yoghurt, peanut butter and 1 tsp curry powder.
  • Marinate the drumsticks in ¾th of this mixture.
  • Combine the tortilla chips, cheese and remaining curry powder.
  • Roll the drumsticks in the chip mixture and refrigerate for atleast 15 minutes.
  • Bake at 200°C for 20-25 minutes.
  • Serve with remaining satay mixture.
