Mixed Vegetable Omelette
Ingredients:

| Eggs | 3 |
| Butter | 1 tbsp |
| Boiled Rice | 2 tbsp |
| Cheese | 1 tbsp |
| Boiled Potato | 1 |
| Spinach Leaves | 15 - 20 |
| Tobasco Sauce | 1/2 spoon |
| Skinned Tomato | 1 |
| Pepper |
Method: Blanch spinach in salted water. Peel and deseed tomatoes. Now chop these dice / boiled potato. Remove spinach leaves and place them in cold water.
In a frying pan, put the butter and chopped spinach leaves. Beat the eggs with a bit of salt. Put eggs in a hot pan and shake the eggs a little.
Add the potato, tomatoes, spinach and cheese along with the cooked rice. Add lots of pepper and tobasco sauce.
Fold omelette over and serve hot.
