Navratra recipe -Potato Salad

Potato Salad


Ingredients:

  • 1 tsp Rock Salt
  • 4 tbsp Sesame Oil
  • 4 medium Potatoes
  • 2 tsps Vegetable Oil
  • 3 tbsps Lemon Juice
  • 10-12 Fenugreek seeds
  • 3 tbsp Coriander leaves
  • 1 Green Chilli, finely minced
  • 4 tbsp ground roasted Sesame seeds

Method:
  1. Boil the potatoes in a big pot.
  2. Meanwhile, combine the chilli, salt, lemon juice and ground roasted sesame seeds in a non-metallic bowl.
  3. Add the sesame oil just a little at a time and mix well.
  4. Heat the vegetable oil and when quite hot, add fenugreek seeds.
  5. When the seeds start to darken pour it into the bowl.
  6. Mix well, then add coriander leaves.
  7. When the potatoes are done, drain and peel while hot.
  8. Cut into cubes and add to the bowl of dressing.
  9. Gently mix to coat all the cubes.
  10. Let cool, cover and refrigerate.


Tip: Always make sure that the potatoes are boiled well in advance and cooled before you use them. It would be better if they can be refrigerated for a short time. This helps the starch in the potatoes to settle down and the tikkis will not be gooey.
