Kaju Barfi


Kaju Barfi

Ingredients:

Cashew (Kaju) - 1 cup
Sugar - 1/2 cup
Water - 1 cup
Ghee - 1/2 tablespoon

Preparation:

1) Grate the cashews in a mixer finely

2) From the sugar and water make thick sugar syrup

3) Now add the grated cashew

4) On low flame stir the cashew mixture constantly

5) Lather a tray well, with the ghee

6) As soon as mixture starts to come loose off the pan in which it is cooked and starts forming a ball, pour it into a tray

7) Let it cool a bit, then knead into a dough roughly and hit it constantly

8) Now put ghee on a roller and before the dough cools down form a uniform layer from it

9) Cut the barfi into shape using a knife

10) One can put silver leaf on it

TIPS: Cool it to normal temperature before serving and store in air tight container
