Moghlai Paratha


Moghlai Paratha

INGREDIENTS:

Flour - 250 gms
Salt - 1 teaspoons or to taste
Potato - 1 large
Carrot - 1 large
Eggs - 2
Onion - 1
Red Chilli Powder - 1 teaspoon
Turmeric Powder - 1 teaspoon
Cumin (Jeera) Powder - 1 teaspoon
Oil - 2 cups (To deep fry) + 3 1/2 tablespoons

PREPARATION:

1) Cut the onion, carrot and potato into very small pieces and fry with all the spices and salt in 3 tablespoons of oil for 5 minutes.

2) Take the fried vegetable off the flame into a bowl and add to it the two eggs and mix it up well. You can add a pinch of flour or cornflour to make the mixture a little thicker and firmer.

3) Now knead the dough and form medium sized balls

4) Roll these balls using rolling pin to a round shape

5) Now put around 2 tablespoon mixture to the middle of the round shape and fold 4 ends to form a rectangle, with the mixture inside it

6) Make sure to enclose the mixture properly, so it does not come out when frying

7) Deep fry each paratha in hot oil in medium for around 4 minutes

8) Yummy Moghlai Paratha are ready to be eaten!!! Serve with tomato sauce and chopped onions!!!

TIPS: You can use a little brush of water to make sure when encapsulating the paratha, the ends stick together well
