Veg/Egg Fried Rice


Veg/Egg Fried Rice

Ingredients:


Rice - 3/4 cup
Carrot - 1
Potato - 1
Onion - 1
Beans - 150 gms
Green Peas - handfull
Cauliflower - 5 or 6 small pieces
Egg - 2
Salt - 2 teaspoons
Sugar - 2 pinches
Cumin (Jeera) Seeds - 1 teaspoon
Cardamom (Elaichi) - 4
Bay Leaves (Tej Pata) - 1
Oil - 3 tablespoons

Preparation:

1) Boil the eggs and keep aside

2) Boil the rice till it is almost done, but not completely done, then wash the rice well with cold water and leave it in a colander to drain

3) Chop all the vegetables into small pieces

4)Heat the oil in a pan and add cumin seeds

5) When the seeds start to crackle, add the chopped potato and onion

6) Stir Fry for 2 minutes, then add the other vegetables to it and fry for 2 minutes more

7) Now add 1/4th cup water and the salt to it and put a lid on the pan and let the vegetables cook for 3 minutes

8) Add the bay leaf and cardomom seeds to the vegetables and stir once

9) Finally add the sugar and the rice to it, stir gently till all the vegetables and rice is well mixed

10) Add little water and put the lid and let it cook for 2 minutes

11) Finally cut the eggs into thin slices and add it to the cooked rice and mix it up well

12) Serve hot!!!
